2 bunches cilantro
2 green peppers
2 jalapeño peppers
12 oz firm tofu
soy sauce
Finely chop cilantro and peppers and stir-fry in a large saucepan or wok. Add cubed tofu and 2 tbsp of soy sauce. Cover and let simmer for 10-15 minutes. Serve over basmati rice.
This is Pica's favorite dinner which she was quite glad to have after returning home from surgery this afternoon, which went well. The jalapeños today were deliciously picanté.
Posted by Numenius at August 13, 2003 10:20 PM | TrackBackGlad to hear that everyone is home safe and sound. Chris says that she doesn't even mind that the Red Sox beat the A's tonight, hoping it helps with Pica's recovery. Rest and relax tomorrow; the day game is on ESPN !!
Hugs, Karen and Chris
Posted by: Karen and Chris at August 13, 2003 10:39 PMESPN is great if you have a TV... :) But I'll get it on the radio, no problem. Thanks. The Giants seem to be ailing horribly with lots of players on the DL so I hope the Sox can pull another one off today (thanks for your generosity, Chris).
Tofu cilantro never tasted so good--it had been nearly 24 hours since I had eaten anything!
